Recipe: Angel Hair in a Red Wine Sauce

If you’ve read our blog for a while you know by now how addicted we are to Netflix. In fact we have blogged about it here, here, here, here, here, and here. Yep, we probably watch too much T.V. Well our most recent addiction is with Curtis Stone and his series called Take Home Chef. He really is quite inspiring and it’s never good to watch the show while we are hungry! Needless to say it inspired me (Jeremy) to whip up something of my own. One of my absolute favorite meals is good ol’ fashioned spaghetti! I love me some carbs. So the other night I made my own meat sauce and topped it off with zucchini. The picture is from Instragram, so be sure to follow us @JeremySchmucker, and @KristinSchmucker – enjoy!!!

Ingredients:

1 lb. Angel Hair Noodles

1/2 lb Extra Lean Ground Beef (93%)

4 small cans of tomato sauce

1 medium can of diced tomatoes

2 tbs. brown sugar

2 tbs butter

1/4 cup Extra Virgin Olive Oil

1 tbs. minced garlic

Oregano

Red Cooking Wine

One Zucchini

1/3 packet of Savory Herb and Garlic Lipton Soup Mix

Directions:

Melt butter in a large skillet. Next place the tomato sauce, diced tomatoes, red cooking wine (less than 1/4 cup. Add to taste.), brown sugar, garlic, oregano (add to preference), and olive oil together in skillet. Heat on high. In a separate pan cook the ground beef until browned, then add to the sauce.

In a separate pan place a small amount of olive oil and water in the pan and mix in the sliced zucchini. Next, mix the oil/water around the zucchini and lightly add the soup mix overtop the zucchini as a flavoring.

Finally, pour the spaghetti sauce over the angel angel hair and place a few zucchini on top! YUMMY!!!

We actually were quite surprised at how delicious this was! In fact, my last three meals have been spaghetti! Hope y’all enjoy!
