From the kitchen…Italian Pasta Stir Fry

I enjoy cooking and Jeremy enjoys eating, so we are a great pair. I am always on the hunt for a new recipe, and sometimes I get brave and decide to make one up. I just throw random things together and say a little prayer that it will somehow taste good. A few months ago I blogged about one of our favorite recipes that I made up, that we call The Favorite. Last week I decided to try to make something new…and Jeremy and I are were so happy with the results. I have named it Italian Pasta Stir Fry and it is easy and delicious which are two of the key ingredients to any recipe. Here is the recipe and a few photos of the process.

Italian Pasta Stir Fry

1 Chicken Breast

1 can on Chicken Broth

2 1/2 Tablespoons of Olive Oil

1 medium Zuchinni and 1 medium Squash

4 Roma Tomatoes or 2 medium tomatoes

1 Pound Angel Hair pasta

1 Teaspoon minced garlic

1 packet Lipton Savory Herb and Garlic Soup mix


Thinly slice Zuchini and Squash. Deseed and dice tomatoes.

In large frying pan, brown diced chicken breast in Olive oil and half of the packet of Soup mix.

After meet is cooked through add chicken broth, garlic and zuchini and squash. Cook until zuchini and squash begin to soften and then add tomatoes.

Add cooked pasta stir and serve
